Hanukkah in Dillingham

Eric Salinger shares his latke recipe and a few thoughts on Hanukkah tradition with KDLG on day two of the eight-day celebration.

'Tis the season, for many faiths and religions. This week millions will celebrate Christmas, and Christmas on the Orthodox calendar follows in a few weeks. Last week Jews around the world began the eight day celebration of Hanukkah.

KDLG's Dave Bendinger spent a Hanukkah evening Wednesday with Eric Salinger in Dillingham, and filed this story:

Ingredients:

2 eggs

3 large potatoes

1 cup mashed potatoes

1 tsp salt

pepper to taste

3 Tablespoons flour

1 tsp grated onion

1/2 tsp baking powder

oil for frying

Directions:

Grate the potatoes with a grater or food processor and squeeze out the liquid.

Beat the eggs very well ~ until foamy.

Add the eggs to the potatoes with the rest of the ingredients.  DO NOT LET STAND, but fry at once.

Drop by spoonfuls into a well-oiled frying pan.  Use a little more oil than what would cover the bottom of the pan.  (You can always add more if you need it. Less is better, but if you need to add more you always can)  Brown the pancake on one side, then turn it over and brown on the other side.

Serve at once,if possible, but if they must be kept, place on a paper towel on top of a cookie sheet and keep warm in oven.(about 250 degrees)
